Summer finally arrived in Vancouver, and I am itching to make a paella. There are many different recipes out there, but one of my favourites is from Emily Lycopolus and her cookbook Spain, Recipes for Olive Oil and Vinegar Lovers. I am sharing the 3 recipes for the Paella experience Emily and I used to do online (maybe we will bring this back again).
